These are small chips produced from parsnips finely cut, fried in low temperature and lightly sprinkled with rosemary. Their flavour is best appreciated when eaten as such, but they can also be used as decoration on other dishes and salads.
Parsnips (pastinaca sativa) is native to the Mediterranean Basin.
Parsnips are a good source of fiber, but is also rich in minerals (manganese, phosphorus, magnesium, potassium).
